1/2 cup dark chocolate almond milk nuked till scalding, add 1/2 cup strong coffee - homemade instant mocha.  LOVE IT!  You can steam the almond milk with a frother, I just don't have one and to tell you the truth, I could care less about froth in my mochas or lattes.  It's that coffee and chocolate I'm after.

I like spicy....SO, Spicy Chicken Wraps...

1 pkg ground chicken
2-3 cloves garlic chopped
1/4 tsp ginger (I don't like ginger...so I omit it)
1/4 tsp crush red pepper flakes
1/4 cup chopped green onions
1/4 cup chopped/died water chestnuts
1 TBSP corn starch
3 TBSP soy sauce
GREEN LEAF or BIB LETTUCE

***you can also add chopped peanuts--(i don't, so I have no comment on it)

cook the chicken, garlic, ginger, and pepper until chicken is cooked through. Mix the corn starch and soy sauce and add to mixture while stirring (I usually double this part because I LOVE soy sauce). Add in the green onions and water chestnuts and cook just long enough to warm them through. Spoon into individual lettuce leaves (I like the bib lettuce, but you can use any kind) and eat like a taco.......YUMMY!

my friend made some fresh buffalo mozzarella, so i have been eating a lot of caprese / panzanella salads this wk.

i spent a good portion today making soups : split pea & ham, minestrone & white bean chicken chili.   
think i'm set for the wk, along with some extra chicken - i made a thai chicken salad.

all the recipes here sound great! i have a question for those of you who mentioned it...are the hungry girl cookbooks made for bandsters??? i am only a month out of my buddy band and i am looking for different options of food so i dont get bored with the same ones...chicken, fish , veggies, etc...anyone have any suggestions on cookbooks or websites?? thank you!!!

btw...i meant to add EASY recipes that are good for us. i have a 3 year old and i work so easy is the key for me right now...lol
