Crock Pot Recipes ~ Dinner For 2

For those of you who just have 2 people to cook for or maybe a small (1 1/2 to 3 quart) crock pot, these recipes are for you.   You can also take any other recipes I have posted and cut the ingredients in half.  You may still have another serving leftover, but it will reheat for lunch the next day really good. CREAMY MEATBALLS WITH VEGGIES 8oz frozen meatballs, thawed 8oz refridgerated red skinned potato wedges 8oz frozen loose-pack stir-fry veggies 1 10oz can cream of mushroom (or onion) soup 1/2 cup of water 1/4 cup sour cream 1. Combine meatballs, potatoes, and veggies in crock pot. 2. Mix soup and water together and pour over meatballs and veggies. 3. Cook on LOW 5 hours. 4. Remove 1/4 cup of cooking liquid and mix with sour cream.  Pour back into crock pot. MIx to combine and serve. PORK AND LENTIL CASSOULET 8oz boneless pork, cut into cubes 1 tsp oil 1 small onion, diced 1 garlic clove, minced 1 1/4 cups water 8oz can diced tomatoes-undrained 2 medium carrots and/or parsnips, cut into 1/2" slices 1 celery rib, thinly sliced 1/3 cup dried brown or yellow lentils 1 tsp dried rosemary 1/2 tsp beef bouillion granules salt and pepper to taste 1. Brown pork cubes in oil.  Add onion and garlic.  Coo****il onions are limp. 2. Transfer mixture to crock pot. 3. Add water, tomatoes, carrots, celery, lentils, rosemary, bouillon, and salt and pepper to taste. 4. Cook on LOW 8 hours or until lentils are done.  TROPICAL CHICKEN 1 1/2 lbs bone-in chicken pieces -skinned 1/4 tsp lemon pepper seasoning 8oz can pineapple chunks -packed in juice.  Do not drain. 1/2 cup mango or apricot nectar 1 tbsp quick cooking tapioca 1 tbsp soy sauce Hot Cooked Rice Flaked Coconut, toasted 1. Sprinkle chicken with lemon pepper.  Put into crock pot.  2. Mix pineapple, nectar, tapioca, and soysauce.  Pour over chicken. 3. Cook on low 6-7 hours. 3. Serve with hot rice and garnish with toasted flaked coconut.

Hey Tammy, I don't know if you covered this one yet, but what I use my Crock-pot for is in making shredded beef and shredded pork, which I then add to other recipes. i just take a big ol' hunk of the cheapest meat I can find and throw it in the Crock-Pot, I cover it with water and set it on the slowest setting. I use two dinner forks to shred the meat after about 10 hours. It works like a charm!

Hey Wendall!  I did do a post about making BBQ with a huge roast (beef or pork).  I was thinking next week of doing a "Basics" and including poaching, making shredded meat and so forth.  I don't use water, I use broth to make shredded meat.  Does yours taste like all the flavor has been boiled out of it?  That was my problem when I tried using just plain water.  Do you salt yours first?  Thanks, T.

ohhh... GREAT idea about using broth! Yeah, I ended up with "Mystery Meat"... just tasteless MEAT. I use Lawry's seasoning salt on most stuff I cook.

Next time try it and let me know how it works out.  I use 1/2 beef and 1/2 chicken broth when I'm making shredded pork. T.

I use Lipton soup packets to flavor the water when I make meat in the crock pot.  It turns out fantastic!  Like for pot roast I use Lipton Onion Soup Mix.  Beefy Mushroom is good too.  Or if you were going to use the meat for a mexican dish you could mix the water with a fajita packet or taco packet.  So many possibilities!

The meatballs one is good with boneless skinless chicken breasts too!  I also sometimes add fresh sliced mushrooms.  It was YUMMY! T.
