Yummy chinese chicken salad recipe!
Today I went and got the stuff after my workout for chinese chicken salad,Ive never had it or made it,it was so good,I only managed a few bites,gonna try some more in a little bit.heres my recipe altered from one I saw in a magazine at the doctors office
1&1/2 CUP of salad mix(lettuce ,red cabbage,carrots)
2 green onion stalks,washed and finely chopped
the meat from one skinless baked chicken leg(leftover from last nights dinner),cut in little peices.
1 boiled egg,cut up
1 small manderin orange divided,and cut into small peices(use fresh)If you must use the kind in a can drain the juice out,its full of sugar
1& 1/2 tablespoon of sliced oven roasted almonds(find them where the salad stuff is in grocery store)
1 tablespoon of lite or fat free ranch
1 teaspoon low sodium soy sauce
black pepper to taste
blend the sauce and dressing with fork,then pour into salad mix,stir the whole thing up,
this makes enough for at least 2 servings!
