Great Cookies
I made thease cookies and they are great. I just had to share them with yall i did not use the jelly in them did not have any I hope yall are all doing well
PEANUT BUTTER COOKIES
3/4 cup JIF Creamy Peanut Butter (I use regular, but you can use Simply JIF)
1/2 cup (1/2 Stick) Crisco Shortening
1 1/4 cup plus 2 Tbsp. turbinado sugar
2 1/2 tbsp sugar-free maple syrup (I use Log Cabin)
3 tbsp milk
1 tbsp vanilla
1 egg
1 3/4 cup all-purpose flour
3/4 tsp salt
3/4 tsp baking soda
NOTE: If you substitute ingredients, I don't guarantee results! LOL (Except maybe the peanut butter - you can probably use your favorite brand of PB).
Preheat oven to 375 °. Combine JIF, Crisco, turbinado sugar, syrup, milk, and vanilla in large bowl. Beat at medium speed with electric mixer until well blended. Add egg. Beat just until blended.
Combine flour, salt, and baking soda. Add to creamed mixture at low speed. Mix just until blended. Drop by heaping teaspoonfulls 2 inches apart on an ungreased baking sheet. (I use a dough scooper, like a small ice-cream scooper - it makes them all uniform in size). Flatten slightly in crisscross pattern with a fork.
Bake at 375 ° for 7 - 10 minutes, or until set and just beginning to brown. The trick is to NOT overbake them. I take them out of the oven when they are still a little mushy and then they stay soft after cooling. If you brown them and they are already firm with you take them out of the oven, they'll be a firmer or crunchy cookie when cooled - it depends on what you like. Cool 2 minutes on baking sheet then transfer to wire rack, foil, or wax paper to cool.
As a variation, don't press with a fork. Instead, take a cap from a pop bottle and press a hole in the middle of the lump of cookie dough. Add a 1/2 tsp. or so of Smuckers Simply 100% Fruit - Strawberry. This makes a great peanut butter and jelly thumbprint cookie.
