I was in a baking mood and thought I'd try to make these cookies, they turned out very yummy ! Not such a great food for an RNYer. But one didn't hurt me.
Mocha Chip Cookies
¼ cup reduced-calorie margarine, softened
1/3 cup Splenda
¼ cup Brown Sugar Splenda, packed
¼ cup egg substitute
1 cup all purpose flour
½ teaspoon baking soda
¼ teaspoon salt
¼ cup unsweetened cocoa
1 tablespoon instant coffee granules
1/3 cup semisweet chocolate mini-morsels
Vegetable cooking spray
Beat margarine at medium speed of an electric mixer until creamy: gradually add sugars, beating well. Add egg sub. Beat well. Combine flour, baking soda, salt, cocoa, and coffee granules. Add to margarine mixture; beat just until blended. Stir in chocolate morsels.
Drop dough by level tablespoonfuls, 2 inches apart, onto cookie sheets coated with cooking spray. Bake at 375 degrees for 5 to 6 minutes.
Remove from cookie sheets, and let cool completely on a wire rack. Yield 22 cookies (71 calories each)
