These sugar free cookies are from my mother's repertoire of Italian Christmas cookie recipes. The dough is tender and flaky and the sweet tart apricot filling is perfect. Don’t let the short ingredient list throw you; they taste out of this world.

4 ounces cream cheese
1/2 cup butter
1 cup flour, plus additional for rolling
1/4 teaspoon salt
Natures Hollow sugar free Apricot Preserves

Blend the cream cheese and butter. Add flour and salt then blend until flour is completely incorporated. Gather dough into a smooth ball, cover with plastic wrap and chill 1-2 hours.

Preheat oven to 375 degrees. Lightly dust counter with flour and roll out 1/2 of the dough to 1/8 inch thickness and carefully cut into 2-inch squares, saving scraps to re-roll.

Blend jar of preserves with a spoon so it is a smooth consistency. Place a 1/4 teaspoon dab of preserves in the center of each square. Fold over two opposite corners of square to the middle, overlapping slightly and pressing so they stick together and jam squishes out a bit. After folding each cookie, transfer to an ungreased cookie sheet, about 1 inch apart.

Bake each batch for 10-12 minutes, until bottoms are barely golden brown. Gently press any overlapped corners down that have opened while baking.
Transfer to a wire rack. Repeat with remaining dough. When cookies are cool, place an additional small dab of apricot preserves on each side of the folded cookie.

Makes about 30 cookies.

I did put about 1/2 cup splenda into the dough of cream cheese, butter, and flour mixture but followed the receipe exactly after that. I did use fat free cream cheese and reduced fat margarine by blue bonnet so hopefully that would bring down the fat grams. The 1/4 teaspoon is very accurate because if you use any more than that you will have a big gooey mess!!!

Just wanted to thank EVERYONE that came to the ornament exchange.  I haven't been to as many as Pam but I think this was my favorite one too.  We had a wonderful time and everyone brought such beautiful ornaments it was really hard to choose which one to "steal".  The food was great as always too.  Shanna thanks for bringing my faves!  Sue those little cookies were a real hit.  I think I'll send Floyd out to the website to find the recipe.  You made it sound so easy to make.  Ellen and Dana it was so good to see you both again - it's been waaaaayyyyy too long.

For those that couldn't make it I'm sorry you missed it.  It was a wonderful way to start off the CHristmas Party Season with the best bunch of "losers" I know.

Merry Christmas All

So..Next year Brenda, I'll be looking forward to seeing your house all decked out!

This was my first ornament exchange and I loved the company and the wonderful food.  Floyd & Brenda, you have a beautiful home and had it decorated so festive.  You were both fantastic hostesses.  Glad you got my smores ornament to add to your collection on your tree.  I loved visiting with old friends and meeting new one's.  Looking forward to next year.

Hope to see lots of you at the Christmas party Tuesday night.
