I made my family a belated birthday cake: reduced sugar jello poke cake with sugar free cool whip. I used sugar free strawberry jello. It was a hit with the entire house and made me feel as though I wasn't missing out not having cake for my birthday. Thanks to all my OH friends for the suggestions!

It was yummy. Basically you use a box cake mix (I used the reduced sugar white cake) and prepare it as the directions say. When it's done baking you let it cool for 15 minutes. While it's cooling, poke holes in the top of the cake with a fork. Mix up a small box of SF jello (any red variety is fine) based on the directions (boiling water then cold water). Pour over the top of the cake and put it in the fridge for a few hours or overnight. Then frost with SF cool whip. I've had the not reduced sugar version plenty of times and this tasted just as good. Enjoy!!
