Happy Birthday Melissa!!!

My birthday is Tuesday and a friend just sent me this recipe the other day. I hope it helps!!

Sugar Free Flour Free Chocolate Cake

 This is from the Suzanne Somers Desserts book

 Ingredients:

Unsalted butter for the cake pan

6 ounces (6 squares) unsweetened chocolate

1 stick, plus 2 tablespoons unsalted butter

6 large eggs at room temperature (VERY important that they are room

temperature)

1/2 cup SomerSweet (I use 1 cup of Splenda)

1 tablespoon vanilla

1/4 tablespoon baking soda

 Preheat oven to 400 degrees

 Cover the bottom of a 9 inch springform pan with two squares of waxed paper (I don't use this, I make cupcakes with it)

Grease the waxed paper and sides with butter. snap the springform sides into place and trim the excess paper. Set aside.

In a heavy bottomed saucepan, melt the chocolate and butter over low heat, stirring until smooth. Set aside to cool slightly.

Place the eggs in a large bowl and beat at high speed until tripled in volume, about 8 minutes. Add the SomerSweet (or splenda), vanilla and baking soda. Beat for 30 seconds.

Mix 1/3 of the egg mixture into the chocolate-butter mixture. Then fold the chocolate butter into the remaining egg mixture until combined. Spoon the batter into the pan and bake for 15 min (I cook it for less time because I make cupcakes).

 Remove the pan from the oven and allow the cake to cool completely. Release the springform and carefully peel off the wax paper.

I don't usually frost it, sometimes I'll use sugar free cool whip as frosting.

Thikning that you will never have cake again, you are setting yourself up for failure. Do not deprive yourself of things that you want or you will regret it.
Tons of solutions for this issue. You just have to seek them out.
1. Pillsbury make a reduced sugar cake mix. I box with 20 ounces of sugar free diet clear type soda. ie. 1 box RS white cake w/ a can of diet cherry 7up mix with a cup of water. Bake for 20 minutes-ish and top with SF cool whip anf fresh Berries. It is to die for. If you will be at the next exchange I will make it for you.
2. Brenda is a whiz at SF desserts...give her a call!
Please do not deprive yourself...There are many things out there...

Shanna, thanks so much. I will definately try that pillsbury cake. Sounds yummy. I don't want to set myself up for failure, but also don't want to think, "Oh I can have a slice of cake cause it's reduced sugar". But I guess once in a great while would be ok.

Splenda.com has sf cake recipes. The super WalMart stores bakeries has sugar-free cakes (yellow..choclate..angel food) as well as sugar free pies and sometimes cookies as well. I have also found sugar-free bakery items at Krogers & Meijer's.

You can have your cake and lose weight too! Nope..you can't have a huge hunk of the cake, but you do not have to go without! And neither does your 9 year old!

Thanks Sherri! I'm no longer crying over my birthday party!!  Everyone on this site rocks. Guess I should have asked about this sooner huh so I could have had a cake for my birthday! Oh well, maybe I'll try something later this week.  Thanks again!

Hope you had a happy birthday!!! If you decide to try the Pillsbury RS cake, first find out if you have issues with Splenda.  I'm one of those RNYers who can handle sugar in limited quantities, but Splenda makes me want to die.  I made the Pillsbury cake for my birthday last year, and within 20-30 minutes after eating it, I was dizzy, shaking, nauseated and had horrible horrible cramping gas pains.  It was the closest I've ever come to dumping, and I never ever ever want to go through it again. 

Strawberries with whipped cream sounds like the perfect dessert!! Or a layered SF jello would work...you can still celebrate your birthday, just find new ways to do it!

I didn't have cake last year b/c I was EARLY out.  But I have had cake at a party.  I got a SMALL piece and took most the icing off.  However, my problem would be haivng it in the house after.  B/c it doesn't matter if it is SF if you eat 1/2 of a cake!:)  So, I think I am just going to buy myself a cupcake at the bakery and take most of the icing off.  I don't dump so I am more mindful of FAT/Carbs than sugars in my diet.  Obviously, cake is not good on any of those levels.  But like Shanna said....thinking I'll never have cake again would be a little silly of me.  I think depriving ourselves is what leads to us finally eating too much of something bad.
