I would love to know what you all can come up with for cookouts that we can enjoy and stay on track!

I especially love campfires and would like ideas for making treats for ourselves that we can enjoy or share with friends.

So my challenge to you all is this.....

S/F Marshmallow roasted over and open fire.

Another one that we like to do yers ago when we went camping, that hamburger (ground turkey, chicken) and cut up some onions, potatoes, carrots, what every you would like, wrap in foil and place in the coals and cook, this is great.

hope this helps some.  I have not been camping in years.

I use a low sugar BBQ sauce or make my own with splenda brown sugar mix and bru**** on grilled chicken and shrimp kabobs. I usually do the small red baked potatoes or salt and pepper potato chunks too with asparagus or green beans or some type of veggie.

Well...we used to grill at the beach in Florida and I would do alot of things. My favs were fish with butter flakes, pepper, spring of dill (small) and a thin lemon wedge. Another was to take Lobster tail or shrimp or crab claws with some old bay seasoning.  Take any of the prvious mixtures and make a pouch out of foil and put ingred. in them and seal tight to keep steam in! Depending on fire temp and amount you cook...7-15 min. Tails take a bit longer. veggies on skewers were good. I would even do some with bananas and pineapple.  Rounded out the meal and kids love it! Not sure if RNYers can do lettuce but Romaine lettuce head cut in half and grilled to warm through with sugar/fat free italian dressing is really good! Got that from Bobby Flay!

We camp a lot, too.  I am wondering how things are going to be for me while camping.  This will be my first summer since surgery.

I like to back cabbage though.  I wrap it in foil with some butter, salt, pepper and water.  Then I either have my husband put that on the grill while he is cooking OR you can put it over the fire. 

I think what I am going to do to avoid smores is take my hot cocoa with me.  I will have some of that while everyone eats smores.

They do make 94% fat free hot dogs. They have only 40 calories in one.

I can most definately tell you what not to try.......chicken hot dogs.  Omgosh they were the nasitest thing I ever tried to chew and swallow.

I get the frozen bags of veggies and heat them up in the microwave and then season them really well with soy sauce, garlic, salt and pepper plus a lil free catalina dressing ..delicous served with your fav lean protein. 

Any lean protein is yummy marinated overnight in lite italian dressing. My fav is pork tenderloin with pineapples and bell peppers.

CAMPOUT BREAKFAST

1 ziploc FREEZER bag
filled w/ 2 eggs
any other items each individual chooses, ex. cheese, mushrooms, onions, bell peppers, ham, bacon, sausage, spinach etc

mix all ingredients in your own bag- be sure to put your name on the bag and boil in boiling water for 13 minutes!!!

Rolls out just like an omelet- anything you want, whatever toppings you like!

Very easy and good! Everyone gets to make their own! We have also done this on the stovetop for the holidays!

We use my husbands turkey fryer and just boil the water in it, instead of using it with oil, we get alot of use out of the fryer by using it as a boiled water pot, lol!!!

Not the "campfire recipe" that you were requesting, but thought I would share a change for breakfast, idea!

I'm gonna have to remember this one! I think it's one of the best 'recipes' I've seen in quite awhile. I hope Tiff reads it. I think it'd be a great idea for Christmas morning!
