Could you post the recipe for your backeye's? I know I have it somewhere on this dog gone pc but it sure would save me some time if you'd post it. There's probably several others who would like the recipe too. Oh...was that a whole batch that you brought to the exchange?

I tried installing a new windows program into my computer at home. I have it all messed up. No internet, nadda, nothing...We have been threaten with termination at work if we get on it, so I am here at the library. I am just now getting all my messages. Here's the recipe for the buckeyes. That was about 2/3 of the batch. Tyler and terry had some before I brought them.
1/2 cup creamy Peanut butter
1 cup Margarine soften
1/2 tsp. vanilla
9 cups splenda
24 tbspls. cornstarch ( 1 1/2 cups)
4 cups sf chocolate...I used sf choc. chips from Walmart Hersheys I think
1/2 bar of paraffin wax
Blend splenda and cornstarch in Blender until a light powdery consistancy
I did in batches, Cause there's alot!
Combine PB,margarine,vanilla and splenda/corn. mix in a big bowl. I used a mixer and then finish by hand cause it gets thick.
Roll out mixture into .5 ounce balls. ( anything bigger than that, They are too big too eat, Believe me) Then I place them on a cool cookie sheet, I use my stonewear from PC. Then place into the refrig. to get cold.
Melt choc. and parafin in double broiler until melted. I use a glass bowl and a sauce pan with water as a double broiler.
Insert toothpicks into ball and then dip into choc. leaving an "eye" where the toothpick is to resemble a buckeye and then place on wax paper. Repeat, and repeat and repeat....Did I say that enough, cause there is alot. When cooled I place in a covered conatainer and keep in the fridge to stay cold but they can stay out on the counter if you need to. Enjoy!
