Chicken Gizzard Soup recipe

First to make enough for a 6 quart pressure cooker catch 20 chickens place in pen and use an Axe to take their heads off.
Soak chickens in boiling water long enough to remove the feathers.
Split chickens and remove the entrails saving the hearts, livers and gizzard.
You can also save the flesh for eating also if you wish.

You could also go to WalMart and buy 3 24 ounce packages if the above bothers you
Cut into small pieces
1 onion
2 carrot's
2 stalks celery
put in pressure cooker with 2 tablespoons of oil olive
sweat the above until done.
Rinse the gizzards and hearts and drain well
Place in pressure cooker
Cover with 50/50 mixture of no fat low sodium chicken broth and water
Brink to a slow boil place lid on pressure cooker and cook for 50 minutes.
I add 1 large can of Cream of Chicken soup at the end.

This will probably sound silly especially coming from someone like myself who I consider to be a good cook but....what does sweat mean?  Does this mean until they are all the way soft or about half cooked or just like blanched?  I would love to try this for my dad, sure wish I would have remembered to try this at the exchange, I sure meant to.  I don't or didn't before surgery care for any innards but this sure sounds really good.

Do not fry or brown the vegtables.  Just cook low heat until soft.

I had forgotten that you had said you wife was going to bring this to the exchange and  so wanted to try it. I used to love chicken gizzards before surgery (well the very unhealthy deep fried way lol)  I would be like sherri and buy the pre packaged  I remember the other way when i lived at home YUK YUK YUK!!!  I guess I will have to give this recipe to my mom and see if I can con her into making it for me as I dont have a pressure cooker.  Thanks so much for posting it for us.
