Yummy Reciepe

I found this online & am going to make it tonight. Thought I'd share it with you- I love a good lasagna- don't you?!

Don't let the word spinach turn you off, this is really good and doesn't taste "diet" at all.

 

Ingredients

1 lb. ground veal or beef
4 oz. mozzarella cheese
1/4 C. chopped onion
Dash garlic salt
1 8 oz. can tomato sauce
Dash pepper
1 tsp. basil
1 4 oz. can mushrooms, drained (optional)
1 tsp. parsley
1 10 oz. pkg. frozen chopped spinach, thawed
1/4 tsp. oregano
6 oz. cottage cheese

Directions

 

Saute onion and ground meat until onion is transparent. Add tomato sauce, basil, parsley, oregano, garlic salt, pepper and mushrooms. Squeeze liquid from thawed spinach and combine with cottage cheese. Cut mozzarella cheese in strips. In 7x11-inch baking dish, arrange in layers spinach mixture, meat mixture then mozzarella cheese. Repeat, ending with hard cheese. Bake in 375 degree oven for 15-20 minutes or until hot and bubble.

4 servings = 6 1/2 protein, 1 1/4 vegetable
8 servings = 3 1/4 protein, 1/2 vegetable (approximately)

Hmmmm....I wonder how this would turn out with asparagus instead of spinach. Bill doesn't like spinach at all. I do love this recipe though since I have a problem with pasta.

I am making something very similar tomorrow night for our supper.  I use a spaghetti squash for spaghetti just put the squash in the microwave for 15 minutes the use a fork to pull it apart (make a slit in the squash with a knife).  I have also used zuchinni in place of lasagna noodles and it is very yummy.

 I have used both spaghitti squash & zuchinni for the "noodles"-yummy. Also ,if you like eggplant, you can use it. Barrilla now has a high protien whole grain pasta~if you are out over a yr. you could use for your carbs. Personally, I don't waste my carbs on pasta myslef. Hope you enjoy this reciepe- we did!

PS. I left out the garlic & used Itialian seasonings instead that was garlic free- you know me- my tummy will NOT tolerate garlic in any form!
