Recipes wanted!

Ok folks - time to give up those recipes!

Jeannie, your chicken taco bake was incredible!

Sherri - your dessert looked delightful!

Someone brought a pizza type casserole with pepperoni on top - it was good!  I don't know who made it....

And all the other luscious looking dishes I didn't have room to sample after filling up on chicken taco bake, pizza casserole, and Sherri's awesome ham and beans!

C'mon - give 'em up!

I didnt sample much ,but boy did Neil.
Sherry i cant Neil to eat ham and beans and thats all he is talking about (those beans were so awesome.),and the kids loved the dessert you made.....
I tryed and love the taco dip it was hot but goodddddddddddddddd.

Reeces Pudding

I used the Pampered Chef Trifle bowl.
3 large mixing bowls, 2 whisks, spatulas, measuring cup

3 pk sf chocolate creme filled cookies (I didn't use Oreo brand but the cheaper ones)
3 pk of instant cheesecake pudding mix
3 pk of chocolate fudge pudding mix
1 c creamy peanut butter
1 large container of sf or fat-free cool whip: set aside 1 cup
6 c skim milk
2 pk sugar-free peanut butter cups

In 1 mixing bowl: Crush cookies

In 2nd mixing bowl: Whisk together 3 pk chocolate pudding mix & 3c milk.Then fold in half of remaining cool whip.

In 3rd mixing bowl: Whisk together 3 pk cheesecake pudding mix & 3 c milk. Add peanut butter and mix well then fold in remaining half of cool whip.

Spread evenly in trifle bowl:  1/4 of cookies, 1/3 of light pudding, 1/3 of dark pudding. 
Then repeat with cookies, light pudding, then dark pudding.
Then repeat with cookies (leave ~1/2 cup), light pudding.
Top with the 1 c of cool whip that was set aside and then sprinkle on the cookies that was held back. Unwrap & decorate with peanut butter cups


Ham & Beans


The beans...oh so easy! You know the jars where the beans are already cooked? Get a few off them. With the pot I made up (huge!!), I put 4 jars in it and used the white pinto beans. Then I got a smoked spiral-cut ham and cut the meat off the bone and removed as much fat as I could. I added the meat & the bone to the beans. I added about 2 jars worth of water to the pot, 4-5 chopped onions, salt, and pepper. Here's what is is different than most recipes...after it simmered for an hour or so, I mixed 2 cans of refried beans with about 2 cans of water and then added that to the bean pot so that the juice wouldn't be as watery. That's it. I removed the bone before bringing it in (Lotus loved it!). Kroger's had the hams on sale. It was suppose to be 30% off but the regular price was $30 and I paid about $15.50. I like alot of meat in mine.

Wow Sherri, I'm definitely printing those recipes out, they both sound delicious! Sounds like they make quite a bit, though, I might have to halve them or something unless I'm having company over.

Thanks Sherri!  The ham and beans rocked!  I love ham and beans, and went for that first - the protein grams must have been really high on that.  I love your trick of adding the refried beans!  I'll have to try that.  Lordy, but it was good! 

(Hubby wasn't too thrilled later, if'n you get my drift....    )  LOL

I dunno Sherri - that seems to be the foods I'm always wanting - the kind I end up wearing, or the kind that pollutes the air!  LOL

My poor co workers when I go back to work Tuesday.  Good thing I have my own office and can shut the door.  I'm gonna put a sign on it that says "Enter at your own risk" !

The recipe is easy ...
Brown 1 pound of ground turkey or chicken ( I prefer turkey but what I brought was chicken)
add 1 pack of taco seasoning mix, if you can handle it Walmart has a package of jalapeno and onion taco mix that is super yummy used in this recipe, it is sorta spicy tho.
add 2 cans of diced green chili's and put your meat mix in a small casserole dish probably like an 9 x 9
layer on 1/2 or 1 package Shredded lowfat cheese your preference.

In a small mixing bowl add:
1/4 C multi grain pancake mix
1/4 teaspoon baking powder
dash of salt
one egg beaten
1/4 milk 

Pour the batter mix over your meat and cheese mix and bake on 375 for about 30 minutes or until a fork comes out clean. 

Serve over shredded lettuce and top with nacho cheese ( I use the kind by campbells with the other soups)

Do you dilute the Nacho Cheese soup or just use it straight out of the can?
