Black Bean Chocolate Cake
Ingredients
1/2 cup | No-sugar added or natural applesauce |
1 box | Devils Food or Rich Chocolate cake mix, any brand |
1 can | Black beans, liquid and all, low-sodium is best |
optional: add 1/2 cup | Chocolate chips |
Preparation
Preheat oven to 350 degrees and prepare 10"X13" pan with non-stick spray. In a large bowl, mash slightly with a fork the black beans with the liquid from the can, leaving about half of the beans intact. Add the applesauce and cake mix. With an electric mixer, mix the ingredients for about 3 minutes on medium speed. Batter will be thick. Pour into the prepared pan, add optional chocolate chips to the top of cake and bake for 35-40 minutes. Test with a toothpick, if still wet, cook for another 5-10 minutes. Cool completely. Makes 16 pieces.
Cook's Notes
If you have a stand mixer, you can add the black beans to the mixer and process for a minute on medium speed for about 2 minutes before adding the cake mix (instead of mashing with fork).
Hi. The recipe is very easy.
Just take a reduced sugar cake mix
Puree and add 1 can black beans (sauce and all)
follow box directions for eggs and water
OMIT OIL
bake just like normal.
You can't taste the black beans and you will never have a moister cake (or cupcake). And you aren't adding any additiona sugar by using applesauce!
I also have a gluten free, sugar free recipe for brownies (I brought these to Ellen's purse party):
1 can black beans (drained and rinsed) (believe it or not these replace the flour!)
4 eggs
1 cup splenda
1/4 cup fat free cream cheese (sorry, I left this off earlier)
4 tblsp cocoa
1 tblsp vanilla
2 tblsp extra virgin olive oil
1 tsp baking powder
1/2 tsp baking soda
Puree all ingredients in blender or food processor. Pour into 8x8 square pan sprayed with cooking spray and bake at 325 degrees for 20 - 25 minutes ****il toothpick comes out clean). I also use a Pampered Chef torte pan (like bite sized cupcakes - makes about 36) and bake about 12 minutes. These make for better portion control and are great for pitch-ins.

Oh, I get it now. I misunderstood your post before. I thought you were saying that by using the applesauce you didn't need to add sugar, but you were actually saying that because you aren't adding applesauce it doesn't add the natural sugar to the recipe. Is that correct?
