1 lb Italian sausage (reg roll sausage in green wrapper)
4 Cans beef broth & 1 can water
1 can fine diced tomatoes
1 pkg tortolinis ( I used 4 Cheese raviolis)
handful of barley
Brown the sausage in a pan.. I use a potatoe masher to break it up while frying
add broth and water and tomatoes.. when boiling add tortolinis and barley set to simmer
IF you use turkey sausage to reduce fat then add 1 teaspoon of italian seasoning.
Sometimes I cut stew meat up into small bite size pcs and use that.. sometimes I add frozen southern has brown potatoes too.. I USUALLY sprinkle the hot soup with parmeason cheese or mostarella cheese... YUM MO!!

Pumpkin Muffins
1 carrot cake- cake mix ONLY
1 15oz can pumpkin
1c. water
Mix all ingredients and bake @ 350- I used mini muffins and baked for 11-13 minutes- till toothpick comes out clean!
Mock Caramel Apple Salad Dessert-
4-5 apples- peeled & diced
lemon juice
1 tub cool whip lite or s/f
1 box s/f butterscotch jello pudding - MIX ONLY
* chopped peanuts*
In med. bowl place apples and mix with lemon juice, just enough so apples won't turn brown
In a seperate bowl mix pudding mix into cool whip! After doing both seperately, add cool whip mixture into apples and mix well! Place into container! *May also garnish with chopped peanuts if desired!*

Greek Cheese Torta
1 10 oz. pkg. frozen chopped spinach,thawed and drained
2 8 oz. pkgs. cream cheese, softened
2 TBSP. Mrs. Dash Original seasoning
2 pkgs of Feta Cheese (4 oz. each) I only used 1 pkg.
1/2 cup sin-dried tomatoes in oil, drained and patted dry
3 TBSP. shelled pistachios, coarsely chopped
Line a small colander with paper towels. Place spina*****olander; wrap paper towels around spinach and squeeze until almost dry. Put cream cheese in Classice Batter Bowl microwave on high for 30 seconds or until softened. Stir in spinach and seasoning; mix well. Add Feta cheese; stir until well blended. Fine dice sun-dried tomatoes with large chef knife. Line the small batter bowl with plastic wrap. Spoon 1/3 of the cheese mixture into bottom of batter bowl, spreading evenly. Top with Tomatoes, forming an even layer. Spread remaining cheese mixture over tomatoes.
To serve invert torta onto a serving platter. Remove plastic wrap. Press pistachios onto the top of torta. Serve with crackers or toasted French Baguette. yields 32 servings.

French style green beans
Canned mushrooms
Skinned Chicken breast
Mushroom soup
Canola oil
Skim milk
Pepper
French's dried onions (original, not cheddar)
For home use, go by what's on the back of the onion can but add a can of mushrooms & saute desired chicken breasts (cut up into bite size pieces) in a small amount of canola oil. Drain both before adding to the green bean mixture.
For the size of dish I brought yesterday, I used:
4 cans green beans, drained
3 cans mushrooms, drained
5 lb saute'd chicken breast, drained
5 cans mushroom soup
1 1/2 soup cans of skim milk
1 3/4 cans of dried onions
Bake for 1 hour at 350, stir, bake for an additional 30 minutes. Add the other 1/4 can of onions on top, bake for 15 minutes to brown the onions.
SF strawberry pie
Yeah, I know. It wasn't think enough. It had good flavor though. I had added some strawberry jel to it. If Ihadn't done that, it probably would had been thick enough.
Crust:
I made a simple graham cracker crust using low fat graham crackers and country crock's light margarine. I baked it at 350 for ~15-20 minutes. Allow to cool completely.
Filling:
This is what I would do the next time...not what I did do.
2 boxes sf vanilla pudding
Any fruity flavored sample packs of protein powder. (I had added 5 packs of Nectar Strawberry Kiwi to it yesterday)
3 cups of skim milk (yes..this is 1 cup less than the pudding instruction call for. That's because when you add the berries & cool whip, they'll make it less thick)
Mix, refrigerate to allow to thicken
Fold in 1 pack of cut up strawberries (I used 2 packs for the size of dish I had yesterday. They were frozen whole without sugar so I thawed & then cut up) and 1 small container of sf cool whip. pour into graham cracker crust.
Top with more cool whip, if desired, and strawberry halves. I also shaved some sf dark chocolate on top.
I also had my dehydrated pineapple slices & blueberries...and raisens (with Splenda). Oh..and my dehydrated Italian seasoned tomato slices.
I've been playing with all those freebie packs of protein powder that I recieve. If it's chocolate/mocca/vanilla/cookies & cream flavor, I dissolved them in a little bit of water and added it to the melted sf chocolate that I top my sf rice krispie treats with (see my profile for the recipe). It it's fruity flavored, add to jello...or as I did, to vanilla pudding. I can't handle drinking them mixed up but with cooking with them? I can't even detect it's in there. Neither can others....my daughter loved this last batch of rice krispie treats! I sneak them past my tastebuds!

No Bake Lemon Cheesecake Pie
Number of Servings: 8
Ingredients for filling
1 pkg sugar free lemon gelatin
1 - 8 ounce pkg fat free cream cheese 1 tsp vanilla
1 cup boiling water
1/2 cup no calorie Splenda
1 - 8 ounce carton sugar free Cool Whip
CRUST
8 full sheets low fat graham crackers
2 tbsp light soft Blue Bonnet margarine
1 tbsp calorie free Splenda
Directions Dissolve gelatin in boiling water, chill until thick.
Cream together cream cheese, Splenda and vanilla. Add gelatin and blend. Fold in fat free Cool Whip.
Make crust by melting margarine and adding crushed graham crackers and Splenda. Pack 2/3 of crust in pie pan. Add the filling and top with remaining crumbs. Chill several hours. Cut pie in 8 pieces. I have one that is almost identical, but uses sf shortbread cookies for the crust. I think I used the snackwells brand, and one cookie fit nicely in a muffin tin to make individual servings
****tail Meatballs with Quick Sweet and Sour Sauce
Meatball Ingredients:
½ Pound lean ground beef or lean ground turkey
½ cup unseasoned bread crumbs
1 large egg
2 tablespoons dry minced onion
2 tablespoons fresh parsley, minced
½ teaspoon salt
¼ teaspoon pepper
½ cup 1% milk
Sauce:
¼ cup cider vingegar
½ cup Splenda Granular
2 teaspoons Worcestershire sauce
2/3 cup cold water
1 tablespoon + 1 teaspoon cornstarch
Per Serving (3-4 meatballs plus sauce)
Calories 130 Fat 5 grams
Carbohydrate 9 grams Fiber 0
Protein 12 grams Sodium 580 milligrams
Diabetic exchange=2 lean meat ½ carbohydrate
WW point comparison = 3 points
Steps:
1. Preheat oven to 350 degrees
2. Meatballs: In a large bow, mix all ingredients
3. Using hands, roll mixture into 1 inch balls and place on ungreased baking sheet.
4. Bake for 15 minutes or until center is no longer pink
5 SAUCE: In a small saucepan, combine ingredents.
6. Place over medium heat and simmer until thickened and clear
7. Pour sauce over meatballs. Serve hot
Now the changes I did. I made some for spaghetti later this week so I used 2 pound of ground turkey, added a small Vidalia onion chopped and a small bell pepper chopped. Then tripled the rest of the ingredients except I used some TVP and oatmeal instead of the bread crumbs. I didn’t measure this just guessed. I used dried parsely and guessed on that also, and no minced onion because I used fresh.
