I told Dawn that I would share this recipe again. I am hoping that she will share the apple salad recipe for me to copy. I do so love apple salad. 

                      Crockpot Chicken Fajitas

4 boneless skinless chicken breast
1 envelope taco seasoning
onion, chopped
1 can fat free refried beans
1 jar salsa
cheese, shredded

Place the chicken breasts in the bottom of the crock pot. Sprinkle the taco seasoning on top and then put on the chopped onion. Spread the can of refried beans on top and then put the salsa over the top. Cook on low for 8-10 hours and a bit before the cooking time is over sprinkle the cheese on top and resume finishing the cooking. When it is done take 2 forks and shred the chicken and in doing that it kind of mixes it up a bit. You can serve this with taco toppings and shells or I just eat it on a plate. I put more cheese on the top before popping it in the microwave too. I use the Mexican blend shredded cheese for this too.

I hope that you enjoy it if you try it. You can make it a smaller or larger recipe too with no problem. That is one of the things that I like about it. It is full of dense protien too so that is a great thing about it too.

Hi Brenda,

I posted BOTH recipes although your recipe is more thorough- sorry!

Anyways- hope you enjoy the MOCK CARAMEL APPLE SALAD it is more of a dessert though!

Brenda,

I am not a fan of salsa.  Do you have any suggestions for something else I could add other than water for a little bit of moisture?  Or do you think it would be moist enough since it's cooking in a crock pot?

I don't think I would use just plain water but maybe a bit of chicken stock. I think that would give it a bit more flavor. Make sure you don't add a lot since you don't want it runny but a bit on the thicker side.
