There was so many wonderful tasting dishes at the camp out and now it is the time to share them with everyone. So come on and share them all with us, everything was so good. I told Bill that only people who had wls could have so many picnic tables full of good food. lol

Pudding Surprise

2 large packages sf instant chocolate pudding
crackers (just the plain old soup crackers)
1 container sf cool whip

Mix the pudding up according to directions. Line a 9x13 glass dish with crackers and top with 1 package of pudding. Line crackers on top of the pudding and pour the other box of pudding on top of them. Top with the sf cool whip and cover with saran wrap. This must be refridgerated for at least 24 hours. The pudding breaks down to like a pie crust. Everyone that has ever had it can't believe that it is sugar free.

I slice a sf angel food cake and top it with sf pie filling. I have used apple and cherry. Then top that with sf cool whip. I have also sliced the cake in half and put the filling over the bottom layer, put the top layer on and top with more of the pie filling. You can also have cool whip with that too. The places that I have taken that can't believe that it is sugar free either.

Now is the time for others to add to these. There was so much there we could really fill up this post!

****************Breakfast***********************

Scrambled eggs
Optional: In skillet, saute (in canola oil) chopped onions, ground turkey sausage.
Beat eggs, add skim milk and mix well. Add mixture to skillet. If you choose not to go with the optional, be sure to have a little canola in the pan. Use a whisk to blend well. Cook over low/med heat, mixing constantly until eggs are CLOSE to being done. Then add cubed Velveta Light cheese. Cover with lid. After 2-3 minutes, stir. Repeat until cheese is melted.
*At home, I've also added mushrooms, ham, garlic..the kitchen sink.

Gravy
Brown turkey sausage until done. Ensure meat is chopped up (Pampered Chef commercial: they have a wonderful chopping tool just for this type of thing!). Drain all the fats off the meat.
Dump enough skim milk into the pot for the amount of gravy you want to make. Because of the small rv fridge, I brought powdered milk & mixed up 3 qts of it for the camp-out's gravy (enough for 2 days...so ~45 people..IF there's a ton of other food too like we had!).
In a cup, bowl, glass, etc put about 1 cup or so of cold water. Add ~2-3 tablespoons of corn starch. Blend well so there is no lumps (it'll look like the powdered milk). Using a whisk, add about half of the mixture to the gravy pot. Add salt & pepper to the gravy pot. Stir constantly over med heat. Be sure to get the bottom of the pan too! You DON'T want gravy to scorch! Yuck!
Once that the gravy starts to boil, with a spoon, check the thickness & the taste. If it's bland, add more salt. If it's thin, add more of the corn starch mixture (rue). Stir and allow to boil again, repeat. Add the rue slowly at this point because it can over-thicken if you don't. Remember...gravy should always be runnier than mashed potatoes! Once the mixture boils, it is as thick as it's gonna get! Oh...COLD water is a must! COLD milk is a must! If you try using hot on either, you are going to wind up with a lumpy mess of garbage fit only for wall-paper paste.



******************Dinner**********************

Salad
Lettuce (cut in large chunks) in a large bowl. For Bill & I , I  use 1 head and don't usually have much left over.
In a medium bowl,  mix together light Miracle Whip (2-3 heaping tablespoons), ~1 tsp mustard, 1/2 tsp or so of powder garlic & of celery seed. Splenda to taste. After it's mixed well, add to lettuce and blend well. I like it fresh without the lettuce wilted at all. Bill likes it then...and the next day!

Deviled eggs
Boiled eggs, halved, put yolks in medium bowl. Any whites that split, chop up & add to bowl.
To yolks, add light Miracle whip, celery seeds, mustard, splenda (sound familiar?) Add chopped onion, sf sweet pickle relish and some chopped sf jerkin sweet pickles. Blend well, fill egg whites. (Give Matt any left-over yolk mixture..lol!)

Beef, turkey, salmon burgers
Locate in frozen section of grocer. Thaw, grill. lol! I had problems with the 'thaw part!)

Refried bean dip.....
! can fat free refired beans
1 can enchilada sauce
1 packae of low fat cream cheese
1 package taco seasoning
1 bag of shredded cheese....
I took the skillet over open flame (yummo)
Your stove at home will work great but the cast iron skillet and fire pit makes it taste better, Ohh and cooking it in the middle of a storm, under an umbrella.LOL
 Mix togeter all ingrediants sitr well let bubble up and then poured in a pan topped w/ shredded cheese and continues cookin until cheese melted. Served with HOMEMADE Amish Salsa and wheat crakers or tortilla chips.

Yes everything was very good. Loved those deviled eggs. 

Baked beans

I used Randal  Great Nornthern beans (large jar)
1/4 cup Splenda brown sugar
1/2 small bottle of sugar free catsup
1/4 cup mustard
6 slices of cooked crumbled bacon.

bake 350 to bubbly (about 1/2 hr )

you can adjust any of the ingredients to taste.  If you like it more tart add  more mustard.

Hey...a little trick I picked up from Karen Saturday was to add some Splenda to your pot of water when you boil corn on a cob. It made it so sweet & flavorful that butter was NOT needed at all!

Hi,
Here's my hashbrown potato  casserole reciepe- it makes alot- so be advised. You can also freeze part of it (uncooked) and fix later.I fixed way too much for our get-together( tripled the reciepe)- had so many leftovers that we had it for breakfast and I sent an extra pan home for someone to enjoy!

Cheesy hashbrowns
1. lg. pkg. hashbrowns ( thawed)
1 can cream of celery soup
1 1/2 c. skim milk
1- 8oz. container fat-free sour cream
 2 cups low-fat shredded cheese- I use colby

Mix all ingredients and save 1/2 c. cheese- sprinkle on top. Bake in 400 degree oven for 30 min. or until browned & bubbly.
Add ins- finely chopped ham, chicken, or  turkey for added protien
Due to allergies I omit several things that can be added- black pepper, garlic salt,onions, peppers- just depends on what you are hungary for!
