Lisa,

You are welcome to check out the recipes on my profile & see if any of those would work for you. The sf eclairs are always a big hit. Splenda.com has recipes on their site also.

For side dishes, you might want to check out FoodTV.com and see if any of those flip your trigger. You can make just about any dish healthy by replacing the higher fat ingredients with lower fat ones. I also replace any oil with canola or olive oil since they are two healthy fats.

Let us know what you decide on & how it turns out!

Fresh fruit.. Melon is always a pleaser... but I like the "cheesecake" Take one small tub of cottage cheese and puree in the blender... add 1 box of sugarfree pudding mix together then add 1 tub sugarfree coolwhip and pour ontop of crushed sugarfree cookies.. put in fridge to set.. Have fun!

That dessert that you are talking about that your husband liked so well at the pitch in was brought by Brenda and Flyod so maybe you could send her a message and she would give you the recipe.  I know it was very very very good and I'm not the fondest of fresh blueberries, but loved that.

Here's a recipe I adapted for myself, and I get raves from non WLS people too.

DIETER'S DREAM MINI CHEESECAKES

Makes approx 24

For Crust:

36 low-fat graham cracker squares
1/3 cup brown sugar (or brown sugar substitute)
2/3 cup light butter, melted

For Cheesecake Filling:

2 (8 oz) packages 1/3-less-fat cream cheese at room temp
¼ cup Splenda
4 tsp vanilla
2 (8 oz) tubs Cool Whip Lite
1 pkg sugar-free white chocolate pudding
1 tsp lemon juice

To make crust, seal graham crackers in a zip-lock plastic bag and use a rolling pin to crush them into fine crumbs. Put crumbs in a medium bowl. Add melted light butter and brown sugar until mixed well. Divide crumb mixture evenly among muffin cups. Can use paper liners if desired. Place muffin tins in freezer for 20 minutes.

While crust is in freezer, combine cream cheese, pudding and Splenda in a large bowl and beat them together until smooth. Add vanilla and Cool Whip Lite and beat at low speed until well-blended. Don't overbeat. Spoon cheesecake filling into chilled crusts and refrigerate.

Top with any left over cracker crumbs and/or no-sugar added fruit pie filling if desired.

If no toppings are to be used, mound the filling in the cups. If topping is used, press filling with the back of a spoon to make a small hollow in each cup.

NOTE: You can cut back on the sugar in the crust and the Splenda in the mix itself if you like. I find that most things are too sweet for me anymore. I also offer regular sweetened fruit topping as well as no sugar-added toppings, on the side so people can make a choice, or have none at all.
