Sorry it was Zucchini Bread not Banana Nut Bread at the Clothing Exchange.
Thanks for all the compliments on the bread, but it was made with zucchini and not banana's.
It was requested that I post the recip and here it goes.
Zucchini Bread
1 cup walnuts or pecans, chopped and optional
1 1/2 C shredded zucchini
1./2 c vegetable or olive oil
1 cup sugar subsititute
2 large eggs, ( I used one yellow and then both whites)
2 teaspoons vanilla
1/2 tsp baking soda
1/2 tsp ground cinnamon (I used a little more)
1/2 tsp salt
1/4 baking powder
1 1/2 cups all purpose flour (I used self-rising, I do not like using salt, etc.)
Preheat oven to 350. In a mixing bowl, combine oil, sugar, eggs, vanilla,baking soda, cinnamon, salt, and baking powder. Mix until all ingredents are blended well. Add flour, mix until moist. Stir in zucchini and Nuts. Pour batter into greased loaf pan. (I used pam to spray). Bake for about 65-75 minutes, or until loaf tests done.
