HELP!!!!!! In need of a good recipe.

I have some fresh zucchini and I was wanting to make some bread, but I cannot find my recipe for it, does anyone have  a good one. Any suggestions on what I can sub for maple syrup.  I found a recipe for zucchini brownies but it calls for 1 1/4 cup of maple syrup and I think that would be to must sugar for us.   Thanks, Peggy

Peggy, Don't know about the zuccini bread but there are sme good sugar-free syrups out there. Check in the pancake aisle and in the health food aisle. Many of the chain grocers have it in the health food stuff. Sherri

That sounds like an interesting recipe! I use the Mrs. butterworth s/f syrup, it is yummy, hubby and son like it too! Maybe that would work!Let us know! Hugz Dawn

Peggy, I too use the S/F Mrs. Butterworth and it is fabulous.  There are also a couple other name brands out there.  I also use it in recipes that call for molasses to help reduce the sugar and calories. Including my infamous baked beans. Are you coming to the exchange Sat.?  I would like to have that recipe if you would share.  It sounds delicious and you know gardens are rally starting to produce so lots of folks will probably have fresh zucchini real soon.
