I need chicken/tuna salad/Phase 2 recipes

So now that I have moved to phase 2 of my diet I am looking at eating tuna/chicken salad for meals. However, I have no clue how to make it really. My grandma makes a mean chicken salad but I can't eat all the stuff in it right now. So please share your recipes or any recipes for this phase 2! Thanks!! Sam

I love tuna/chicken salad. I use a can of tuna, dice up two hard boiled eggs. finely dice celery and add lite miracle whip. I started using this on crackers but changed to putting in on slices of cucumber (less carb). I always have this made up in the fridge. I never get tired of it. lot of good protein with the tuna and egg.

Well I use the chicken from the can and put it in my food chopper to make it nice and fine. Then I use mayo with a little bit of sour cream. (the sour cream makes it a bit creamier) I add some of my own spices that I like. Sometimes I add chopped up pickles. I never put in onions or anything like that. I also avoid grapes. ( I have seen those in chicken salad believe it or not) Anyway, the pickles are good to give it crunch. That is pretty much it. You will have to experiment on what type of mayo you like. I like the Hellmans light with my sour cream. OH it is so good!! I use to eat them on Triscuits!! Holy cow now I am getting hungry!

My grandma puts all kinds of stuff like peas, broccoli, grapes, green onions, bacon bits, and cashews in her chicken salad. It might not sound that appetizing but it is really good. What seasonings do you use? Sam

Sam when I make my tuna salad I do it the low carb way. I use a can of tuna some Hellmans maynanase (its the lowest in sugar, never use mircle whip...tons of sugar in that) and I use dill relish...Mt. Olive brand..it also has no sugar. Sometimes I even hard boil some eggs and add some peas. I never measure just thrown in how much u like. It never comes out bad. Its very easy Mariah

Sam, I make mine alot lke Jan only I add some low fat ranch dressing to it to give it a little flavor punch. I use salt, pepper, and onion powder in mine and I love frozen peas thawed and tossed in mine. Have fun! I remember my first batch at 4-5 weeks..I was in hog heaven! It took a little longer to digest but it was sooooo good! Bon Appetite! Marianne

The ranch and tuna combination sounds yummy. Going to have to try that! I did make an attempt last night...it was one of those everything but the kitchen sink type of deals. I used tuna, lite miracle whip, no sugar added sweet relish, garlic powder, dried onions, and a dab of hot sauce. Wasn't too shabby for a first try! Sam

Sam, Chicken of the sea has a tuna salad lunch pack. Comes with mayo, relish, tuna and crackers. You just mix it all in the tray provided and spoon it on to the crackers. This is my staple at work, I have four kits in my drawer right now. Maybe not as good as home made but quick and easy. Sarah

Hi everyone ~ ok that all sounds sooooooo good since i hate everything i eat , except my diet bible says i cant have crackers for awhile still pouts - if anyone has anything other food ideas please post ~ i need all the help i can get jenn
