Quasadilla's Anyone???
Just as I promised at the clothing exchange - here is the receipe for the quasadilla's.
Seafood Quasadilla
---------------------
2 Whole Wheat or Multi Grain Tortillas (these are small sized)
1 cup low fat Mexican Mix shredded cheese
2 Tbs - lite (or Organic from the Vegan Isle at any grocery store) Alfredo Sauce
1/3 cup chopped imitation crab meat
1/3 cup salad shrimp
1 1/2 Tbs crumbled Turkey bacon
DIRECTIONS:
Spray a pizza pan VERY lightly with Pam or other LowFat/Non Fat cooking spray. Place one tortilla down and add sauce to the top. Make sure to coat all the way to the edge. Add other ingreidents making sure to add the cheese last. Place a tortilla on top. Place in a 425 F degree oven. When top tortilla becomes golden and crispy, take a spatula and flip the entire quasadilla over. Cook in oven till top tortilla becomes golden and crispy. Let set for 3-5 minutes. Cut into 8 equal pieces.
NUTRIONAL FACT:
each wedge - averages roughly 2 oz of food by weight, @ 8-10 grams of protein, No carbs, less then .1% fat.
Chicken Club Quasadillas
--------------------------
2 Whole Wheat or Multi Grain Tortillas (these are small sized)
1 cup low fat Mexican Mix shredded cheese
2 Tbs - organic queso cheese dip
1/2 cup chopped pre cooked and seasoned chicken (Tyson has great flavors)
4 dehydrated sun dried tomatoes (rehydrated in warm water for at least on hour prior)
1 1/2 Tbs crumbled Turkey bacon
DIRECTIONS:
Spray a pizza pan VERY lightly with Pam or other LowFat/Non Fat cooking spray. Place one tortilla down and add quseo cheese dip to the top. Make sure to coat all the way to the edge. Add other ingreidents making sure to add the cheese last. Place a tortilla on top. Place in a 425 F degree oven. I have also made pure veggie ones using low fat refried black beans, spinach, turkey bacon, and sun dried tomatoes.
The best thing about the quasadillsa is that your imagination can make any type of healthy quasadilla.
I'm glad everyone enjoyed them. I'll make sure to bring them again and I'll make sure it's more quanity then this last time, haha.
Jodi you are awesome! I wondered who made them...I tried the seafood one and it was DELICIOUS!! I will definatly try these ,,,my hubby would love them too! Had one of the yummy chicken ones and by the time I had room for a 2nd one, they were all gone! Can't wait to try the seafood one! As you know, I keep shrimp in my freezer.. Actually, there's crab in there right now too...and some of the tortilla's in the fridge and Lite alfredo sauce in the cabinet! Speaking of which...I can't have pasta anymore (hypoglycemia) so I've tried the spaghetti squash for something different. Here's my chicken alfredo:
With a small amount of olive oil, saute small strips of chicken breast (about 4 breast****il done. Add a small jar of Ragu Lite alfredo sauce. Simmer on low. Microwave 1 spaghetti squash until core is spongy (~10-14 minutes), allow to cool for 5 minutes. Cut in half, remove seeds, then remove the squash with a fork. It comes out looking like spghetti. Place on plates as you remove it. Top with the chicken/alfredo mixture. I also sprinkle on a little bit of parmasean. Since Bill hasn't had the surgery, this is enough for 1 meal for him and 3 for me.
