Chicken Enchilada Dip Recipe

Thank you Floyd and Brenda for letting us all invade your home.  I had a wonderful time and got to see so many great people.  Here is the recipe for the Chicken Enchiladad Dip I brought.  Low Fat or Reduced Fat products can be used.

INGREDIENTS

  • 1 pound skinless, boneless chicken breast halves
  • 1 (8 ounce) package cream cheese, softened
  • 1 (8 ounce) jar mayonnaise
  • 1 (8 ounce) package shredded Cheddar cheese
  • 1 (4 ounce) can diced green chile peppers
  • 1 jalapeno pepper, finely diced

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C). Place chicken breast halves on a medium baking sheet (I seasoned with salt, pepper, and extra virgin olive oil.)
  2. Bake in the preheated oven 20 minutes, or until no longer pink. Remove from heat, cool and shred.
  3. Place shredded chicken in a medium bowl, and mix in cream cheese, mayonnaise, Cheddar cheese, green chile peppers and jalapeno pepper. Transfer the chicken mixture to a medium baking dish. (I opted to put jalapeno slices on top instead of mixing in)
  4. Bake uncovered in the preheated oven 30 minutes, or until the edges are golden brown.

You can serve this with tortilla chips or in a tortilla.  I opted to go with Pita Chips.

I did not.  I wanted to try the original recipe and see how it tasted before trying the low fat and comparing.  I like some low fat products but others I can stand (sour cream and ranch dressing are two things that make me nauseaus...ugh)

Well the results are in... Andy love the chicken enchilada dish.  Looks like I'll be making that one again.  I ate it plan but I put his on the flatout flat bread and made it like a burritto with some salsa on top...  He even asked for a second one...He doesnt do that often with new things...LOL

Sounds delightful!  I forgot to note, I made mine with 4 oz. mayo and 4 oz. sour cream.  Either way, it's delicious!

Hi Sam, I cant wait for my daughter to make this, it sounds so yummy. I do eat chicken a lot, have problems with seafood or beef . I hope to see you soon, Its been so long. I miss everybody.
