Chicken Enchilada Dip Recipe
Thank you Floyd and Brenda for letting us all invade your home. I had a wonderful time and got to see so many great people. Here is the recipe for the Chicken Enchiladad Dip I brought. Low Fat or Reduced Fat products can be used.
INGREDIENTS
- 1 pound skinless, boneless chicken breast halves
- 1 (8 ounce) package cream cheese, softened
- 1 (8 ounce) jar mayonnaise
- 1 (8 ounce) package shredded Cheddar cheese
- 1 (4 ounce) can diced green chile peppers
- 1 jalapeno pepper, finely diced
DIRECTIONS
- Preheat oven to 350 degrees F (175 degrees C). Place chicken breast halves on a medium baking sheet (I seasoned with salt, pepper, and extra virgin olive oil.)
- Bake in the preheated oven 20 minutes, or until no longer pink. Remove from heat, cool and shred.
- Place shredded chicken in a medium bowl, and mix in cream cheese, mayonnaise, Cheddar cheese, green chile peppers and jalapeno pepper. Transfer the chicken mixture to a medium baking dish. (I opted to put jalapeno slices on top instead of mixing in)
- Bake uncovered in the preheated oven 30 minutes, or until the edges are golden brown.
You can serve this with tortilla chips or in a tortilla. I opted to go with Pita Chips.
Mine is in the oven now...by 8:30 Andy and I will be chowing down.

Well the results are in... Andy love the chicken enchilada dish. Looks like I'll be making that one again. I ate it plan but I put his on the flatout flat bread and made it like a burritto with some salsa on top... He even asked for a second one...He doesnt do that often with new things...LOL

I cant wait for my daughter to make this, it sounds so yummy. I do eat chicken a lot, have problems with seafood or beef
