Chili Chicken Salad Cups
Chili Chicken Salad Cups
½ cup light or fat free mayo
juice of 1 lime
1 tsp chili powder
½ tsp ground cumin
¼ tsp salt
4 boneless, skinless chicken breasts, cooked and cut into bite-sized chunks
½ cup 2% shredded cheddar cheese
¼ cup chopped green onions
1 rib celery, chopped
1 head of Boston lettuce
In a medium-sized bowl, combine all ingredients in order except lettuce, and mix well. Peel 12 leaves of lettuce off of the head of Boston lettuce. Rinse them well, and dry with a paper towel. Scoop out ¼ - ½ cup of chili chicken salad and tuck into a lettuce cup. Repeat until all of the chicken salad is used up. Arrange on a serving platter and enjoy!
