Sugar Free - Carb Free Peanut Butter Cookies
I just HAD to share this recipe with everyone here! Hi, I am Lisa and I don't often post here, but at one year out and 150 pounds down I am realizing that it is now that I am needing support from as many places as I can get support.
Okay, okay here is the recipe and then I'll finish the story......
1 cup peanut butter (name brand seems to work best - don't know why)
1 cup splenda
1 egg
1/2 t. vanilla
Mix - form into balls - use a fork dipped in more splenda to flatten - bake 350 degrees for 12 - 15 minutes (time seems to vary with different ovens) - let cool completely before trying to pick one up.
These cookies are great! The consistency is pretty dry, but the taste great. And, yes, you read the recipe correct - there is NO flour included. (This recipe came from a friend of mine who saw it on the Paula Dean show.)
As for needing support...... As I said, I have lost 150 pounds - currently at 201 from 351, from a size 32 pant to an 18 pant. I have gone from never having a date, let alone a boyfriend, to talking marriage with my boyfriend. I feel like I have lost a best friend that I have had for 25 years over my wonderful surgery results. And, I find myself wanting to "graze" during the day on food. So, I am making a pointed effort to reach out to people who understand and get all the additional support I can find.

The cookies sound wonderful, Im gonna try em cause I have been craving cookies!! They are my downfall when I fall off the wagon. After 17 months and 130 pounds off, I dont wanna mess up now, so these will help a lot!
I know what ya mean about losiing friends, Ive lost some too. I even had one lady at church tell me how bad I look, and how much better she liked me fat! i said,,well,,get over it, cause that fat girl aint comin back!!
Just lem em rage, and go onand enjoy your healthier happier life. You deserve the joy!
