A Tuna Question
I know that being prego (and im also told that any woman who is of child bearing capabilities should as well) so I need to watch my fish intake due to mercury. I stick to my one can a week, even less usually. Tuna just happens to be the only fish I like, and then it has to come from a can (spring water). I've been wanting to have something like tuna casserole, which I never made before surgery, but I was wondering if someone had an idea of what I can put in to replace the noodles? My pouch tollerate noodles okay, but only about 3 bites and then Im done. Im really wanting to eat this for the protein i get out of the tuna. Plus, i just really want some freakin tuna all of a sudden hehehe.
Personally I love my Tuna Pattys
1 small can of tuna 3 or 4 saltines crumbled up, 1 egg..salt and pepper, mix all together and fry till warm and crispy.. served with delmonte spinish.
OR when I do make tuna casserole I use a box of Lipton Noodles stroganof mix and make it like the recipe and add my tuna and warm up. Lipton noodles are smaller.. just remember to over cook any pasta so you know it isnt going to keep cooking and growing when you swallow it.

Bill & I aren't big on pastas. I wasn't even before I became hypoglycemic. I use spaghetti squash instead. For a tuna casserole, I'd do one squash (cut in half, remove seeds, wrap in seran wrap, microwave until sides are soft...squeezable..about 10-15 minutes...use a fork to peel the spaghetti out of the core in threads), add the tuna & mushroom soup (and peas if you like them), mix well, pour into a casserole dish, top with course cracker crumbs, bake at 350 for ~30 minutes ****il crackers are just browning).

I have found since my surgery, that I prefer Chicken Salad, homemade, boil the chicken breast in boullion, then run through the food processor along with celery, onion, a little carrot, and a pinch of oregano, and a pinch of parsley. And of course Light Mayo.
You could make that into a casserole as well, the squash sounds like a good pasta alternative, but for the topping, try plain or cheddar soy crisps or soy saucers. You might enjoy it just as much as tuna.
