Regina, I have several recipe ideas on my profile. One which isn't on there.... 1 can chili Velveta Light Mix, melt, serve with crackers and/or tortilla chips Another thing... you can serve with crackers is cheese Wedges. My favorite comes in a little round cardboard container called 'The Laughing Cow'. They have it in light flavors that are only 35 calories a wedge, 8 wedges to a container. 1 wedge is enough for several small crackers or 2 of the 2x4" ones. They have more than one yummy flavor to choose from. Another thing....Make some cheese crisps: On parchment paper, make small mounds with shredded cheese. Space mounds ~1-2" apart. Bake at 350 for 15 minutes. Allow to cool thoroughly. In a small crock pot, warm 1 can refried beans for party-goers to spread onto crisp. Supply shredded cheese to top. Remember when making any cheeseballs to use Light Cream cheese....less fat! If you are looking for quick & Easy, Smart ones has some excellent desserts...love their cherry cheesecake! Just thaw and cut in quarters. Pilsbury has a sugar-free chocolate chip cookie now. There are 12 to a package (that you bake). Want something munchie? Quartered flavored rice cakes can be pretty good. So can roasted nuts. You know..about anything that you would bring last year, you could probably bring a 'light' version of. There are SO MANY low fat/low carb things on the grocery shelves these days! As for my reciepes, the eclairs were probably the #1 favorite at work with my non-WLS co-workers. Shrimp ****tail of course!!!! I make my own sauce--ketchup and lots of horseradish! I like my shrimp with a little Cajun seasoning sprinkled on.

I have a ton of people that love the peperoni chips! Easy to make and travel with! And to add to Sherri's shredded melted cheese crisps, you can mix in slivered nuts. I like almonds. Have fun, Carmen
