Thanksgiving Day
autumn pear salad
Dressing
1/3 cup rice wine vinegar
2 tsp cranberrt juice consentrate
1 tsp dijon mustard
1/3 cup olive oil
Salad
9 cups salad greens
2 medium Amjou or bosc pears cored and thinly sliced
3 o0z. blue or goronzolacheese,crumbled
3Tbls chopped walnuts (I candy mine)
3 Tbls dried cranberries
In a small bowl wisktogether vinegar,juice concentrate and mustard. Slowly add oil, whisking until blended and thickened. Season with salt and pepper.
Divide greens among 6 plates. Top with sliced pears ( I grill them first. yummy), crumbled cheese, walnuts and cranberries Drizzle with dressing and serve.
