yellow squash

I have been given some yellow summer squash from a co-worker's garden and was wondering if anyone had any good recipes I could use it for? TIA

yellow squash is one of my favorites. I haven't been through surgery yet, so you may want to modify these. I like to slice it in half longways, bru**** with a litte butter, and season. Then I put it in a glass pie pan w/a little water in the bottom, cover w/saran wrap, and microwave to desired tenderness. You can also microwave it a little, then fini**** on the grill. Or--just slice the squash and an onion. Throw it in a skillet w/salt, pepper, butter, and water. Cook it over medium heat in skillet w/a lid. Cook it until it's tender, then remove the lid and let some of the water cook out. Or--boil it a little and season w/molly mcbutter or butter spray. Or make a casserole. Slice and blanche. Season w/salt and pepper. Layer it in a casserole dish w/a mixture of cream of chicken/can of milk. layer squash, then soup mixture, 1/2 box chicken stove top, squash, soup mixture, rest of stove top. Bake at 350 until bubbly. I also like it skewered and grilled. Brush w/ a little butter and season. You can make veggie kabobs w/squash, pepper, sweet onion, mushrooms, tomatoes...etc. Serve on wild rice. You don't have to add a lot of butter--just a little to flavor it. You can even use lite butter.

I'm a plain Jane with it. I cut it in chunks & steam it...or I slice it, zuccinni, and onion and saute it with just a little bit of Olive Oil. Sherri
