Well it's going to be another hot, sticky one today. YEEHAW! At least Sam won't notice it though, she will be in the freezing cold OR, please remember her today. I have a new invention for a zuchinni casserole that one of my friends thought up. It is awesome and surprisingly has a lot of protein in it. Since zuchinni season is fast approaching let me know if you would like the recipe, there's really no actual measurements. But it's quick, easy, healthy and delicious! I loved the chilly OR when I had my RNY...but when I had my revision???? I had lost 100 lbs by then and froze my tushy off!! Mariah...I know we'll all be anxiously waiting for your post on how Sam is doing!

Good Morning ,
I am going to try and make it to work today. My family and I went to the Heartland Resort to the beach on Sunday and well let's just say- I fell asllep in the water and I am so burnt on my face, when I wake up my eyes are swollen almost shut. I got sun in so many places that I don't think have ever had sun, lol! Anyway, I learned my lesson and will be out of the heat for a bit. But it was fun while I was there! Anyone else ever go there?

Good Morning sunshine. I may be crazy but I love this hot weather. Julie, I have three zuchinni on my kitchen counter right now. I need some recipies for them other than the good ole bread that I can't eat. these are wild, they are round and called cannon ball zuchinni. I'd never heard of them before I got these. y'all have a good day and keep cool. Thoughts and prayers are with Sam this morning .I'll be watching for the post on her. I'm sure she do fine.
3-4 zuchinni quartered and diced
1 yellow squash quartered and diced
1/4 c (about) onion
either steam all of the above or saute in nonstick skillet until tender crisp..no need to use any oil the water from the veggies will "steam" them.
2 eggs beaten
1 c (or more) cottage cheese
1 c (more or less) monterey jack cheddar cheese
salt and pepper to taste
Mix the above and stir in veggies. Pour into casserole. Top with 1 cup Pepperidge Farms Herb stuffing mix tossed with about 2T melted butter. Sprinkle topping over veggie mix. Bake at 350 for 20-30 minutes or until hot and bubbly and top is browned.
This gives you protein from the eggs, cottage cheese and cheese. You could do this without using the stuffing mix, but that's what makes it taste so good, and you really aren't getting that many carbs with them.
Like I said before this isn't an exact measurment recipe, you can adjust according to your taste.
Another good thing I've done with zuchinni is to slice it like you are going to fry it, place the slices on a cookie sheet, drizzle with olive oil, sprinkle with coarse salt and pepper and bake in a hot oven, like 400-450 ish until they are browned and a little crispy. Delish!!
