Thought I would share my favorite egg recipe with everyone
Pamelas recipe for protein eggs
2 oz cream cheese (soften in microwave)
1 egg
1 tbs splenda
1 tsp lemon concentrate
1/2 tsp vanilla
mix softened cream cheese and egg. Add remaining ingredients. microwave on high for 2 minutes.
* it tastes better if you don't totally mix the egg and cream cheese; you get little pockets of cream cheese. Also I would often change the vanilla to some of my Sugar Free syrups by Divinci (sp). I personally loved it raspberry and I like cinnamon and hazelnut too.
I have a friend who puts in some sf jelly or real fruit preserves.
