Heather, I know where I get some really good ones. Might sound kinda strange but its Suzannesomers.com. She has several diet books and on here boards are tons of recipes. Her philospy is Protien and only natural carbs. Never real sugar. I cant tell you how many 100's of recipes Ive gotton from her boards...

I have tons of recipes and sites for where to find them. Let me if you want I will email you some sites. I also have some tried and true ones. I have tried to lo carb off and on for a couple of years. As a matter of fact that is the only way that I have been able to lose any weight but then I just gain it back and more. Oh well thats way more than you asked for! Have a great evening.

1 pkg Azteca Flour Tortillas whole wheat
1 pound LEAN ground beef
1 can whole kernnel corn, drained
1 cup salsa
1 can (15 ounces) tomato sauce
1 package taco seasoning mix
1 (16 ounces) cottage cheese
2 eggs
1 teaspoon oregano
2 cups shredded cheddar and monterey jack cheese blend
Remove tortillas from refrigerator. Heat overn to 375. Brown meat and drain. Add corn, salsa, tomato sauce & taco seasoning mix. Simmer, stirring frequently for five minutes. In a seperate bowl, combine cottage cheese, eggs, and oregano. Line of bottom of greased 13X9 baking dish with 5 tortillas overlapping edges. Top with half meat mixture. Spoon cottage cheese mixture over meat. Arrange 5 tortillas over cheese mixture. Spread remainder of meat mixture over all and top with the shredded cheese. Bake for 30 minutes or until cheese melts and casserole bubbles. Let stand for 10 minutes before cutting and serving.
