Hey!!!! I did get a recipe for a lower-sugar orange chicken, you might be interested in. Orange Chicken Recipe Sauce Ingredients 1/4c Light orange juice 1/4c Sugar free honey (I found this at Schnucks and Jewel but haven't tried it yet) 2 Tbsp soy sauce 2 Tbsp cornstarch 3/4 Tbsp dry mustard Make a sauce with the orange juice, honey, soy sauce, cornstarch and dry mustard. Make sauce and pour over your choice of fried chicken breast pieces, or grilled chicken breast pieces... Stir over low heat until sauce thickens. Serve over rice, noodles or veggies.

Need to bother you one last time... how do you make "mini meatloaf" I read it in your profile...that sounds like the answer to what I should take to work in my lunch!

Not a problem! Make your favorite meatloaf recipe, using 2 lbs of ground beef or turkey (or 1/2 and 1/2). Instead of making 1 big loaf, put them in 12 cupcake/muffin tins! Top each individual one with ketchup if you like, and bake for approx 1/2 hour. They freeze wonderfully! My favorite meatloaf recipe: 1 lb ground beef 1 lb ground turkey 1 box Stouffer's Stuffing Mix (cubes and seasoning) 1 egg 1/2 cup beef or chicken broth Ketchup/mustard - if you'd like to add This has a GREAT flavor with the stuffing mix!

Ok, I'll tell you what I ate today (so far) but I won't tell you how big the servings were. I can eat way too much now that I'm 20 months out. I made whole wheat waffles for me and the kids for breakfast. I added some vanilla protein powder to the mix. It was great. Even the kids liked them! I also had some scrambled egg whites with cheese. I made sausage too but I didn't eat any. Then for lunch I stopped with my daughter at Boston Market. I ate a chicken breast, green beans and potatoe wedges (bad girl). I also ate a few bites of my daughters chocolate cake (again, bad girl). Since surgery, my kids have longed for the big Sunday breakfasts I use to make. We stopped having crepes, waffles and pancakes for a very long time. I now have begun making breakfast again but I make sure it's whole wheat and I usually add protein powder. I experimented last week with crepes for the first time. They came out GREAT. Even my daughters friend who slept over asked me to give her mom the recipe. For anyone who's interested here it is: 3/4 cup egg whites (equal to 3 eggs) 2 cups whole wheat flour (I sifted it but I'm not sure it matters) 2 1/4 cups skim milk 1/4 cup splenda and/or 1/4 cup protein powder 1/4 cup butter or margarine (melted) 1/4 tsp salt Beat egg whites until frothy. Add other ingredients a little at a time and mix well. Batter should be very runny (add more milk if necessary). Put about 1/4 cup of batter in a hot non-stick pan and roll it around to distribute into a very thin pancake. Wait until brown on one side and then flip with a spatula. Brown second side and then serve. I like crepes with sugar free jelly, or peanut butter and bananas. My kids usually eat it with sugar free syrup or powdered sugar and butter. Sometimes we have fresh strawberries and whip cream (lite of course). A babysitter of ours made us crepes for dinner one night and added cauliflower in a cream sauce (if you do this, I would leave out the splenda in the recipe and use unflavored protein powder).

Wow I could never make my own recipe!! I used to think I couldn't cook and thats why I didn't, but now I realize I was just too lazy.. and the drive thru was so convienent. Now I actually enjoy cooking!
