Pepperoni Pizza Cassarole

This was adapted from Southern Living Mag. December 2013. Theirs had a lot more stuff in it. You might even try this with spagetti squash.

1 pkg any hollow pasta- prepared 

1 jar pasta sauce

1 8oz box sliced mushrooms cooked in frypan with 1 T olive oil with onions and green peppers if using.

1 onion, sliced and diced  

1 green pepper (or red)

1 lb ground meat ( they said sausage, I had ground round) cooked

4 0z. sliced pepperoni

1 c sliced olives

salt pepper and basil

 

1cup reduced fat shredded cheese.

mix everything together, in greased cassarole except cheese. spread cheese on top.

Bake until hot and bubbly.

Looks good. I have a similar one from an old church recipe book that uses elbow macaroni. The only thing is that my recipe is lacking on the flavor because it is geared to kids who have sensitive taste buds.

The only thing with spaghetti squash is that it might end up coming out mushy and watery. Spaghetti squash is real good with just making a meat sauce and then serving it over it.
