Easy Beef Barley Soup
1 to 2 cups shredded beef roast
1 can mushroom slices
1 carrot, sliced
1 peice celery, sliced (if you want to)
1cup raw barley
64 oz. of water
2 heaping tablespoons of instant beef broth
parsley for color
1 can crushed tomatoes
boil water and cook barley. add everything else to it and simmer until done. ( I used cooked carrots)
A nice warm meal for a cald day.
You will need more water or broth. I forgot how much the barley absorbs.
I love beef barley soup, one of my favorite soups. My mother, my aunt (my mother's sister), and my grandmother (my mother's & aunt's mother) makes the best beef barely soup. They're like the "queen" of making soups. I can go for just about any kind of soup right now, but I have to watch my sodium intake, I'm a "heart healthy" diet and a "the dash" diet. I wish I can find some canned soups that are low in sodium like about 250 mg or less that I can pour in a bowl and micowave (the ready made kind that you don't add water to).
