Crunchy Quinoa Salad
Here is one that you can't ruin .
Prepare 1 cup quinoa according to directions.
Cool.
Add:
1can diced tomatoes
2 stalks finely diced celery
1 cup diced cukes
1 cup diced pepers, any color
1 large diced radish
6 green onions sliced
Season with salt and pepper
Add 2 tablespoons lemon juice and enough Italian dressing to taste.
Chill
you can add whatever else you want, olives are nice, add some meat to make it a full dinner dish.
