R. O. D.Seared Sea Scallops
I tried to find a picture on line for this from the card's website (PU card @Meijer) but could not find how to access the recipes as they seem to only cater to the retail market with selling the cards. Anyways, I picked up this card about a year ago and had not tried the recipe yet. It is a great protein source and if you like seafood you might like this. I bought my frozen scallops from Costco. I am sure if you want organic you could probably find them at Whole Foods. My scallops are at least the diameter of a 50 cent piece, more likely bigger. A fresh fish monger could be an option also.
I am going to sear them in my porcelain glazed Dutch oven as it is deep, heats really hot and there will be less splatter especially with a splatter screen.
Prep time: 3 minutes Cook Time: 6 minutes
12 large sea scallops
1/2 tsp. each of chili powder, dried oregano & cumin. 2 tbls of olive oil.
1. Dry scallops well with paper towels, set aside. In small bowl stir together chili powder, cumin, oregano and salt and pepper to taste. Dust scallops on both sides.
2. Heat oil in large skillet over high heat. Do not crowd scallops; cook in batches if necessary. Sear scallops just until opaque, about 3 minutes per side. Serve warm.
Serves 4 (3 pieces seems just enough for a RNY patient)
Per serving: 126 cal, 8g fat, 1g saturated fat, 28mg cholesterol, 134mg sodium, 1g carbohydrate, 0g fiber, 11g protein, 0g Omega-3.

Our personal feelings on this recipe is that it is awesome! Now, we did not put S & P on them until after they had sauteed in the Dutch oven, The time frame is perfect but we like more spice than just "dusted" and I had that put aside (another 1/2) already for that reason because the first batch took most of the spice and herb. I did not add anymore oil to the Dutch oven.
