R O D Quinoa, Beef and Cheese Stuffed Peppers
It was mentioned in Dawn's ROD about Quinoa and it being used instead of rice for most WLSers. I started a search for recipies that would use Quinoa instead of rice when making stuffed peppers and I found a bunch. What I did was Google the pharse of Quinoa, beef stuffed peppers and came up with a bunch of recipes. Here are 3 that caught my fancy. Now it does not say whether to use red or white Quinoa but I am going to guess that the white would simulate rice if you are going for looks. My personal favorite is red because I feel it has a more robust flavor as my taste buds feel that the white is bland.

Two of the recipes I noted said to cut the peppers vertically instead of just cutting off the top and then stuffing them.
Note that the first one talks about the fact that she likes to cook with organic ingredients. I am not sure if anything other the peppers are organic or not - just saying . . .
I am going to try the top recipe on Sunday. I will make it for lunch/dinner leftovers for early in the week as on Sunday we have a Lions Club 'psghetti dinner at the Park District.
