Caprese Salad

5 Roma tomatoes (wahsed and sliced as you like)
1 container of fresh mozzarella (cut if needed into bite size pieces)
2 garlic cloves, minced
1/4 cup of EVOO (or less)
1 scant tsp, salt
1 tsp basil OR oregano (not both)  (I used fresh but original recipe called for dried)
juice of one lemon

Mix all ingredients together and set on counter, stirring occasionally.  The salt brings out the juice of the tomatoes.

Serve as side dish or:

Add to green salad (no further dressing needed)

Use as Bruchetta topping (chop tomatoes instead of slicing)

Steak topping

Add more tomatoes and cheese and let sit 20 minutes.......

Use left over juice as marinade for sliced chicken breast (overnight), then carefully remove chicken, and saute until done.  Adremaining juice and tomatoes, boil for 1-2 minutes and then toss with cooked penne pasta and simmer for 5-6 minutes.

Marinade chicken overnight and grill for a Ceasar Salad topping.

Would be great with shrimp and without the cheese, fish......

I kept in in the fridge but it needs to come to room temp before serving.  YUMMY!

I have a bumper crop of tomatoes and have been eating tomoat slad every day. It's like eating God's sunshine.
