Creme of Bleu Cheese Soup nothing diet about this

I did not ask for this but was offered the recipe when I was talking to the front desk guy. He goes - would you like the recipe? I was thrilled.

1 cup butter
1 chopped onion (did not specify how large)
1/3 cup chopped celery
1 1/4 cup Sherry
3/4 cup flour
1 1/4 cup chicken stock
1 pint heavy cream
12 ounces shredded mozzarella cheese
1 cup parmesan cheese
12 ounces crumbled bleu cheese

Melt butter in a braising pan over medium heat. Add onion and celery and saute until vegetables are translucent. (by the way the onion and celery were chopped very finely - maybe minced). Add Sherry and reduce until all alcohol is evaporated. Whisk in flour to make a roux. To the roux, add chicken stock and then slowly bring to a boil. Add heavy cream and simmer for 15 minutes. Turn heat to low and add the mozzarella cheese and parmesan cheese, stirring constantly until melted. Remove from heat and add bleu cheese, stirring constantly.

NOTE: to re-heat leftover soup, gently warm over medium heat and do not bring to boil. (I would say if you have a double boiler to reheat it with that).

This is one of those recipes if you are looking to WOW some company you can do it with this.

Thanks SO much!  This is MUCH differenct than the one I made up after I had been there.  Good to have the original!
