R.O.D.--Stuffed Jalapenos
This is a "recipe" that my neighbor gave me. Not alot of measurements, but very yummy!
Cream Cheese
Ricotta Cheese
Parmesan Cheese
Pork Sausage
Crumbled bacon or bacon bits
I used a block of cream cheese, about 3/4 of a container of ricotta and a generous handful of parmesan and mixed it all together.
Cooked 1 lb. of pork sausage and crumbled it finely.
Mix it all together, stuff into jalapenos that have bee halved, seeded and the white membrane removed. WEAR GLOVES! I had a TON of jalapenos from the garden that needed to be used and I still had stuffing left over. The jalapenos lose some of their "bite" in the cooking process. I liked these, even thought I don't really like spicy things. I also heated up about a 1/2 a cup or less and ate it with a spoon.
Bake at 350 for about 15 minutes or until golden.
