R.O.D.--Strawberry Mango Salsa

Look at what I just found!!!!!  Sounds yummy!

Strawberry-Mango Salsa

1/2 onion

3 tomatoes

2 jalapenos

1/2 cup cilantro

1 red pepper

Juice of 2 limes

3 mangos diced

15 strawberries

Chop all ingredients and mix.



This came from the Wisconsin Cheese Board and said it would be great served on Barbeque Chicken Quesedillas.  For those, boil chicken, cool and shred.  Reheat with barbeque sauce.  Put into flour tortillas with "Mango Pena Beechwood Cheese" (which I have NO IDEA where to find-----I would use Queso Blanco or any other smooth-melting chese) with salsa and heat in frying pan until melted.

I might just eat it with a spoon!

It is Mango Pena cheese made by the Beechwood Cheese Co., by Sheboygan, WI.
