R.O.D.--Blue Cheese Cole Slaw
Well.......I seem to have lost the soup recipe, but I found this instead!
Blue Cheese Coleslaw
Serves 6
1/4 cup apple cider vinegar
2 tablespoons chopped onion
2 tablespoons Splenda
1 teaspoon celery seed
1/4 teaspoon salt
1/4 teaspoon dry mustard
1/4 teaspoon pepper
2 cloves garlic, minced
1/4 cup vegetable oil
1 medium head cabbage, shredded
1/2 cup crumbled blue cheese
1. Combine vinegar, onion, sugar, celery seed, salt, mustard, pepper and
garlic in a bowl. With a whisk, add oil slowly until mixture is well
blended.
2. In another bowl combine cabbage and blue cheese crumbles. Cover both and
chill for at least 1 hour.
3. Pour vinegar mixture over cabbage and toss.

Add 1 can chicken broth; a dash of parsley. When hot, add half & half, about 1 pint. When hot, don't boil, add crumbled blue cheese. Thicken this with cornstarch, mixed with a little water. Serve with croutons. |
