Cheesy Mediterranean Salad
Makes 8 servings
INGREDIENTS:
4 cups cottage cheese
1 tablespoon olive oil
2 tablespoons fresh lemon juice
1 cup Roma tomatoes, diced
2 tablespoons red onions, finely diced
1 teaspoon smoked paprika, plus more for garnish
DIRECTIONS:
In medium bowl, mix all ingredients with a spoon. Let stand 10 minutes and sprinkle with additional paprika, if desired.
