Italian Chicken Pasta Bake

Set oven to 400'

Spray with cooking spray, a 11 x 13 baking dish

Saute until soft:

1/4 cup chopped onion
2 cloves garlic
2 small zucchini, sliced
2 cans sliced mushrooms

Add:
2 t Italian seasoning
1/2  t salt
1/2 t pepper
i/2 t suar or 1 packet sweetner
2 cans crushed or diced tomatoes ( I used Italian style)

heat and stir until warm. Remove from heat.

Add:

2 cups shredded chicken
1/2 cup shredded cheese

Place in bottom of dish;

1 packageAny mini  frozen raviloi

Pour sauce on top, sprinkle 1/2 cup shredded cheese on top

Bake until heated through, about 20 min.

This sounds like something I can make for Amanda...I just have to take the Chicken out and replace with to****he's vegetarian).  She loves zucchini and mushrooms.  I will email her the recipe see what she thinks.

Lisa I'm on day 3 of my pre-op liquid diet....however this sound yummy...
