R.O.D--Mu Shu Chicken

Craving Chinese?  This sounds yummy to me....I would probably substitute a lettuce leaf for the tortilla but that is just me.

Mu Shu Chicken (Prevention Magazine)

Ingredients

  • 1/2 teaspoon cornstarch
  • 1 tablespoon reduced-sodium soy sauce
  • 2 tablespoons each dry sherry and hoisin
  • 2 teaspoons canola oil
  • 1 tablespoon each minced fresh ginger and garlic
  • 14 ounce bag coleslaw mix
  • 1/2 cup chopped scallions
  • 2 cups shredded rotisserie chicken
  • 1 teaspoon toasted sesame oil
  • soy sauce mixture
  • 8 flour tortillas (6" diameter)

Directions

Whisk 1/2 teaspoon cornstarch, 1 tablespoon reduced-sodium soy sauce, and 2 tablespoons each dry sherry and hoisin in a small bowl. Heat 2 teaspoons canola oil in a large nonstick frying pan over medium-high heat. Add 1 tablespoon each minced fresh ginger and garlic and stir-fry 1 minute. Add a 14-ounce bag coleslaw mix and 1/2 cup chopped scallions and stir-fry until just wilted, about 3 minutes. Add 2 cups shredded rotisserie chicken and soy sauce mixture. Toss until heated through. Drizzle with 1 teaspoon toasted sesame oil. Serve wrapped in eight 6" flour tortillas, warmed in the microwave, and, if desired, additional hoisin for spreading on the tortillas and chopped scallions for sprinkling over the filling.

Dawn, this looks really good. I would not have thought of the lettuce leaf instead of the tortilla shell.

I made this last night and it is a "keeper"!
Small adjustments:
I used "Brocolli Slaw" instead of cabbage slaw
I did not have dry Sherry, so I used 1 Tbsp. wine vinegar and 1 Tbsp. Masala Wine (which is very sweet)

We have some Ethiopian flat bread and the family used that as I did not have tortillas.  I think the flatbread is closer to the pancake that you would get at an authentic Chinese restaurant.

YUM!  YUM!!!!
