R. O. D. Salmon Burgers w/sour cream-dill sauce
I found this on the Betty Crocker website. They have a tool where you can put in 3 ingredients and it will find recipes for you.
Sauce
1/3 cup sour cream (I used regular because that is what was in the house)
3 Tbls mayo ( I used Lite Hellman's)
3/4 teas dried dill weed (I used a whole teas + as I love dill weed)
Burgers
1 large egg (I used a jumbo + 1 large)
2 tbls milk (I added about 2 tbls more)
1 can (14 3/4 oz) salmon, drained, skin and bones removed, flaked
2 medium green ionions, chopped (2 tbls)
1 cup soft bread crumbs (I used Panko bread crumbs)
1/4 teas salt
1 tbls veggie oil (I used olive oil)
1. In small bowl, stir sauce ingredients until well mixed. Cover, refrigerate until serving (I made it up about 2 hours ahead of time)
2. In medium bowl, beat egg and milk with fork or wire whisk. Stir in remaining ingredients except oil. Shape mixture into 4 patties, about 4" in diameter.
3. In 10" nonstick skillet, heat oil over medium heat. Cook patties in oil about 8 minutes, turning once, until golden brown. Serve with sauce.
I had 3 cans of 6 oz each of salmon and used that and I just upped the egg and milk and also fried them about 1 1/2 minute more.
1 serving (normal) is a whole pattie. Dave and I shared one pattie and it was more than enough.
1 (normal) serving = calories 300, total carbs 6g, protein 20g, sodium 750mg.
PS - I meant to add that I would like to try this with a combo of canned crab meat and canned shrimp. I think it would be awesome.
