ROD Chicken in Raspberry Lime Sauce
Hi Gang.
I just made another yummy recipe but this one needs a little tweaking. The flavor was perfect but it was on the greasy side so I need some ideas.
I put rice, chicken broth and raspberry lime vinagerette salad dressing and chicken in a crock pot and cooked it on low all day. The flavor is wonderful but it is slightly oily. Any suggestions. Maybe I should not have used the entire bottle. Ordinarily if I was going to grill the chicken I would have marinated it in the salad dressing but since I was using the crockpot, I just added it to the whole mess. It is not bad but not perfect. Any ideas appreciated.

Sounds yummy!
My guess is that first, check the salad dressing to see how much oil is in it. Maybe half a bottle next time? Also, maybe there is a similar dressing that is either low-fat or fat free with the same flavor????
Other than making the dressing from scratch, those are my only ideas.......

Thanks for the feedback. I was so surprised because it was a fat free dressing. So you may be on the right track on using only half a bottle. Also, I was lite handed on the rice and that would have absorbed more liquid where I might not have noticed the oilyness. The flavor was wonderful so I do want to tweak this. I also have thought maybe I could find some raspberry vinegar and lime juice and use that in conjunction with the chicken bullion. I guess I will just have to play some more. It definitely is worth pursuing!
