ROD Mango Tango Chicken
I created this today and had it for supper. Super easy and super yummy!
1 1/2 c. brown rice uncooked
1 can chicken broth
1 jar pineapple mango salsa (I get it at Walmart as the Sams brand)
Skinned, boned chicken breasts or pieces
In a crockpot, place chicken broth, rice, salsa and chicken. Cook on low for 6-8 hours and enjoy! This is somewhat spicy depending on the spicyness of the salsa. I really liked it. The chicken was very moist, the rice, fully expanded so it does not expand further in the pouch.

I used 3 small chicken breasts. As far as the salsa goes, I am sure you could use any type of salsa and it would be just as good. It had a salsa flavor just with pineapple and mangos added. I know that I also get corn and black bean salsa. I would take regular salsa and add a small can of pineapple cubes and maybe a mango chopped or frozen mango chunks. The fruit just added an extra twist to this. You could use more chicken breasts without any problems. I am just one person so I did not need a lot of meat.
