I am having a Splenda HouseParty soon and this recipe came from their site.  I am posting their original recipe, which is better for us than a cookie made with pure sugar, then I "Re-Made" the recipe, changing most of the butter into applesauce and using pure Splenda instead of the "Splenda Sugar Blend".  I'm not sure how the texture will be affected, and you could always play around with the ratio of Splenda to sugar if it is not right.  The Splenda Sugar Blend is 50/50.

You could also use a bit of almond flour to cut the carbs, but I would not substitute it for ALL of the flour.

I also would not eat these every day, but they might satisfy that craving in a healthier way........

Crispy-Chewy Oatmeal Raisin Cookies

Original Recipe from Splenda

 

Serves: 36 | Prep Time: 15 Minutes | Total Time: 27 Minutes

Keep these crisp-yet-chewy cookies on hand for an after school treat.

Ingredients

1½ cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 cup butter, softened

1 cup SPLENDA® Sugar Blend

2 large eggs

1 tablespoon molasses

1½ teaspoons vanilla extract

3 cups old-fashioned oatmeal, uncooked

1 cup raisins

Directions

1. Preheat oven to 350 degrees F.

2. Stir together flour, soda, and cinnamon. Set aside.

3. Beat butter and SPLENDA® Sugar Blend at medium speed with an electric mixer until fluffy. Add eggs, molasses and vanilla, beating until blended. Gradually add flour mixture, beating at low speed until blended.

4. Stir in oats and raisins.

5. Drop dough by rounded tablespoons onto lightly greased baking sheets.

6. Bake 10 to 12 minutes or until lightly browned. Cool slightly on baking sheets. Remove to wire racks; cool completely.
